  • 4 oz lemon pudding
  • 1/2 C sugar
  • 1/4 C water
  • 2 beaten egg yolks
  • 2 C water
  • 3 egg whites
  • 1/3 C sugar
  • 9 " pie crust

Step 1

Stir pudding mix,1/2 C sugar, 1/4 C water and 2 beaten egg yolks on medium saucepan.
Stir in 2 C water.
Bring to a boil on medium heat, stirring constantly.
Cool 5 mins., stirring twice.
Pour into cooled baked 9"pie crust.
Heat oven to 350*.
Beat 3 egg whites in large bowl with mixer on high speed until foamy.
Gradually beat in 1/3 C sugar until stiff peaks form.
Spread over filling sealing to edge of crust.
Bake 10 -15 mins. or until meringue is lightly browned.
Cool at room temperature 4 hrs.
Refrigerate.
