  • 1 1/2 cups flour
  • 1/2 cup cornstarch
  • 1 cup unsalted butter at room temperature
  • 1/2 cup powdered sugar
  • 3 TBS lime juice
  • 1 tsp finely grated lime zest
  • additional powdered sugar

Preparation

Step 1

Preheat oven to 350 degrees.

Line 2 baking sheets with parchment paper. Whisk flour and cornstarch in bowl to blend. Using mixer, beat butter and 1/2 sugar unil light and fluffy. Mix in lime juie and zest. Beat in flour until smooth. Refrigerate dough until just firm. about 45 minutes.

Form into balls and bake until golden on top and slightly brown on the bottom, about 20 minutes. Tranfer baking sheets to racks and immediately sift generous amounts of powdered sugar over cookies. Cool completelt on sheets. Dust again before serving.
