If you'd rather not use nuts in the recipe, the honey-roasted pecan topping can be replaced by a streusel. Combine 1/2 c. sugar, 1 T. cinnamon, and 1 t. ground ginger. Sprinkle on tops of muffins.

Ingredients

  • Muffins:
  • 1 c. of mashed ripened bananas (about 4 bananas)
  • 1/3 c. of oil
  • 2/3 c. of brown sugar
  • 1 t. cinnamon
  • 2 eggs
  • ¾ c. of all purpose flour
  • ¾ c. of whole wheat flour
  • 1 t. of baking soda
  • 1 t. of baking powder
  • ½ t. of salt
  • 1/2 c. pecans
  • 1/4 c. milk
  • Topping:
  • 1 c. chopped pecans
  • 1 t. ground ginger
  • 3 T. honey

Preparation

Step 1

1. Preheat oven to 350 F.
2. Mash bananas. Combine bananas, brown sugar, oil, cinnamon, and egg. Beat until mixed.
3. Mix dry ingredients together. Add to banana mixture alternating with milk, until combined.
4. Add 1/2 cup of chopped pecans to the batter.
5. Line muffin tin with cups and fill each cup about 3/4 full. Sprinkle honey-roasted pecans on tops of muffins.
