Ingredients

  • 4 med onions sliced
  • 3 TBL butter
  • 2 TBL flour
  • dash pepper
  • 3/4 C beef bouillon
  • 1/4 C dry sherry
  • 1 1/2 C plain croutons
  • 2 TBL butter, melted
  • 2 oz Swiss cheese, shredded (1/2C)
  • 3 TBL parmesan cheese, grated

Preparation

Step 1

cook onions in butter just until tender
blend in flour & pepper
add bouillon & sherry
cook & stir until thickened & bubbly
turn into casserole (1 quart)
toss croutons w/ melted butter
spoon atop onion mixture
sprinkle w/ swiss & parmesan cheeses
place under broiler just until cheese melts - abt 1 min

can be made in advance & then reheated in 350 for 30 min
