  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups sugar
  • 1/2 cup butter (soft)
  • 3 eggs
  • 2 tbs lemon juice
  • 1 cup buttermilk
  • 8 oz cream cheese (soft)
  • 8 tbs butter (soft)
  • 1 tbs lemon juice
  • 4 cups powdered sugar
  • coconut flakes (garnish)

Directions

Preheat oven to 350 degrees. Grease two 8 inch round pans.

In large bowl, mix flour, baking powder, baking soda, and salt.

In separate bowl, cream butter and sugar. Beat in eggs, flour mix, and buttermilk.

Pour batter into pans.

Bake 30 minutes.

Prepare frosting by combining cream cheese and butter on medium speed for three minutes. Add lemon juice and powdered sugar. Mix additional five minutes.

Allow cake to cool completely before frosting.

Garnish with coconut, and top with fresh fruit.
