Ingredients

  • 6 (7-inch) whole wheat pitas
  • 3 cloves garlic, pressed
  • 1 1/2 cups shredded part-skim Mozzarella cheese
  • 1/2 cup thinly sliced sweet onion
  • 1 1/2 tablespoons cider vinegar
  • 1/2 tablespoon olive oil
  • 1/3 teaspoon crushed red pepper flakes
  • 1 1/2 cups quartered grape tomatoes
  • 1/3 cup pitted Kalamata olives, coarsely chopped
  • 3 tablespoons chopped basil leaves
  • 6 cups mixed salad greens

Preparation

Step 1

Preheat oven to 475 degrees. Place pitas on a baking sheet. Spread garlic evenly over pita breads. Sprinkle each pita with 1/4 cup of cheese and divide onion evenly on top. Bake for 8 minutes or until edges are lightly browned and cheese is bubbly. Meanwhile, in a large bowl, whisk together vinegar, oil and crushed red pepper flakes; stir in tomatoes, olives and basil. Add salad greens and toss gently to coat. Place 1 pita on each dinner plate and top with about 1 cup of salad. Serve immediately.
