Ingredients
- 1 ounce (about 12) sun-dried tomatoes -- packed without oil
- 1/3 cup pitted green olive
- 1/4 cup fresh parsley
- 2 Tablespoons white wine vinegar
- 1 Tablespoon olive oil
- 2 cloves garlic -- peeled
- 6 cups cauliflower
- 1/4 cup finely chopped red onion
- 1/2 teaspoon salt
- 1/4 teaspoon pepper

Preparation
Step 1
Combine boiling water and sun dried Toasties in a bowl; let stand 30 minutes or until soft. Drain and chop. Combine tomatoes, olives, parsley, white wine vinegar, oil, and garlic in food processor. Process until finely chopped.
Cook cauliflower in boiling water two minutes. Drain and rinse cauliflower under cold water. Combine tomatoes mixture, cauliflower, onion, salt, pepper in bowl; toss well.
