Ingredients

  • 4 Tablespoons margarine -- divided
  • 3 Tablespoons flour
  • 3/4 cup chicken broth
  • 1 4 ounce can mushrooms -- reserve liquid sliced
  • 1 10 ounce box frozen broccoli spears -- thawed
  • 2 boneless chicken breasts -- cut in half
  • 1/3 cup fresh bread crumbs
  • 1 Tablespoon fresh chopped parsley

Step 1

In a small saucepan, melt 3 Tablespoons margarine. Add flour, stir constantly over low heat 1 minute. Gradually stir in chicken broth and liquid drained from mushrooms. Cook over low heat, stirring constantly until sauce boils and thickens. Stir in sliced mushrooms.

Arrange thawed broccoli spears in shallow 2 quart baking dish. Place chicken over broccoli. Spoon mushroom sauce over chicken, cover and bake at 350 for 20 minutes.

Meanwhile, toss bread crumbs with remaining 1 Tablespoon margarine and parsley. Sprinkle crumbs over chicken, continue baking, uncovered, for 10 more minutes until chicken is tender.
