No Bake Strawberry Cheesecake

Ingredients

• 12 graham crackers -- finely crushed
• 6 Tablespoons margarine -- melted
• 1 cup plus 2 T. sugar -- divided
• 4 packages Neufchatel cheese -- softened
• 1/2 cup strawberry preserves
• 2 cups fresh strawberries -- chopped
• 1 tub (8 ounces) whipped topping

Preparation

Step 1

Mix graham crackers, margarine and 1/4 cup sugar; press onto the bottom of a 13x9 inch pan. Refrigerate while preparing filling.

Beat the cream cheese with 3/4 cup sugar in a large bowl with electric mixer until well blended. Add preserves; mix well. Add strawberries and remaining 2T. sugar in small bowl; mash with fork. Stir strawberry mixture and whipped topping into cream cheese mixture. Spoon over crust and cover.
