Ingredients
- 12 eggs -- separated
- 2 2/3 cups sugar
- 1 1/3 cups oil
- 1 3/4 cups potato starch
- 2 ounces bittersweet chocolate
- CHOCOLATE ICING
- 2 cups confectioners sugar
- 1 teaspoon vanilla
- 2/3 cup oil
- 3/4 cup cocoa powder
- 1/4 cup water

Step 1
Beat egg whites with sugar until stiff.
Add egg yolks and oil and mix until combined.
Meanwhile, grate the chocolate and add potato starch to it.
Add chocolate and potato starch slowly to the batter, folding with a spatula until batter is smooth.
Pour batter into a parchment lined 9 x 13 inch pan or 3 9" round pans. Bake 1 hour for the 9 x 13 inch pan and 50 minutes for the 9" rounds.
To make the icing, place all the ingredients in a bowl and mix until smooth.
