Ingredients
- 12 medium potatoes -- peeled and cubed
- 2 cups (8 ounces) shredded cheddar or swiss cheese -- divided
- 1 1/4 cups milk
- 1/3 cup butter -- softened
- 1 or 2 teaspoons salt
- 2 eggs -- beaten

Preparation
Step 1
Place potatoes in saucepan and cover with water; cover and bring to a boil, cooking until tender, about 15-20 minutes. Drain and mash. Add 1 3/4 cups cheese, milk, butter and salt; cook and stir over low heat until cheese and butter are melted. Fold in eggs. Spread into greased 9x13x2 baking dish. Bake, uncovered, at 350 fro 25-30 minutes. Sprinkle with remaining cheese and bake 5 minutes longer.
