Chicken Muenster Casserole

Wonderful chicken dish that is quick and easy. I have served this at several dinner parties and it has always been well received. Serve with salad and rice pilaf.

Ingredients
- 2 lbs. Boneless Chicken Breast
- 3-4 Beaten Eggs
- 1 cup Italian Bread Crumbs
- 1/4 cup Olive Oil
- 1 cup Fresh Button Mushrooms
- 1/2 cup Chicken Broth
- 1/2 lb Sliced Muenster Cheese

Step 1
Preheat oven to 325 degrees
Remove skin from chicken and cut chicken into bite size chunks. Beat eggs and soak chicken for 2 hours. Roll chicken in bread crumbs and brown in olive oil. You will need to add more oil as needed after initial 1/4 cup is used. Pour chicken broth into a 9x13 baking pan and place cooked chicken in pan. Cut mushrooms in 1/4's and gently saute. (I don't always do this step. And have not noticed any quality difference in the finished dish. Sometimes I just cut mushrooms and add to chicken.) Cover chicken and mushrooms with sliced cheese. Make sure to use enough cheese to cover all of the chicken. Bake in preheated oven for 30 minutes.
