Ingredients
- 1 cup butter (softened)
- 3 ½ cups applesauce
- 2 egg
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- ½ teaspoon cloves
- 1 cup sugar
- 1/3 cup sugar
- 3 cups flour
- ¼ teaspoon salt
- 1 teaspoon baking soda
- ½ teaspoon baking powder

Step 1
In a bowl, mix together butter, eggs, vanilla, sugar, flour, salt, baking soda and baking powder until it has a pie dough consistency. Divide dough into three balls. Press each ball into three ungreased pie tins and pat flat with fingers. Bake at 350 degrees for about 15 minutes or until light golden brown. Remove from pans and cool. Meanwhile, in a saucepot, add applesauce, cinnamon, cloves and sugar. Cook on low heat until sugar is dissolved and sauce it thickened.
To assemble, place first cookie on plate and spread 1/3 of the applesauce on top. Continue to spread filling between layers and stack one layer on top of the other, spreading equal amounts of applesauce on each cookie.
Refrigerate until chilled. Serve in slices.
