Pork Tenderloin with Mushroom Sauce

Ingredients
- 4 cups sliced mushrooms
- 1 pork tenderloin (500g)
- salt and pepper
- 2 tsp vegetable oil
- 1 shallot, minced
- 3 cloves garlic, minced
- 1/4 cup red wine
- 2 tbsp cream

Preparation
Step 1
Sprinkle pork with salt and pepper.
Heat half of the oil in large ovenproof skillet over medium heat and sear pork all over (about 6 minutes)
Roast in 400 F oven for 15 minutes.
Transfer to cutting board and tent for 5 minutes.
Carve into 1" slices.
Meanwhile heat the remaining oil over medium-low heat and saute mushrooms.
When softened, add shallots and garlic and cook 6 minutes, stirring occasionally.
Stir in wine and reduce by 1/3, about 3 minutes. Stir in pork juices and cream.
Serve sauce over pork.
