Ingredients
- 4 large potatoes
- 1 head garlic
- 2 tablespoons light butter
- 1/2 cup skim milk
- 1 scallion, minced
- salt and pepper
- 1/3 cup parmesan cheese

Preparation
Step 1
1. Heat oven to 375.
2. Roast potatoes and garlic 1 hour.
3. Remove garlic. Bake potatoes 30 more mins. Mash garlic pulp with butter.
4. Scoop out potato pulp, add to garlic. Add milk-s&p. Mash well, refill skins. Sprinkle with cheese. Broil 5 mins.
