Ingredients
- 1/2 cup coriander seeds
- 1/4 cup cumin seeds
- 27 pods of green cardamom
- 6 bay leaves
- 11 pods of black cardamom
- 20 cloves (whole)
- 7 blades of mace
- 10 inches of cinnamon stick
- 2 star anise
- 1 tbsp fennel seeds
- 1 tsp black peppercorns
- 1/2 tsp nutmeg (grated)
- 1/2 tsp salt

Preparation
Step 1
1) Put all ingredients in a pan and lightly roast the mixture.
2) Let cool and grind mixture to a fine powder in blender.
3) Pass through a sieve.
4) Store in an airtight jar.
