Barb's Banana Bread
By Addie
This is easy enough for kids to mix and bake. It's also one of the best banana breads we've ever tasted!

Preparation
Step 1
Preheat the oven to 350 degrees F. Butter or lightly coat an 8 1/2-by-4 1/2-by-2 1/4-inch loaf pan with vegetable cooking spray. (You can use different sized loaf pans, but adjust the baking time accordingly. Smaller pans require less baking time.)
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
In the bowl of an electric mixer set on medium-high speed, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the bananas, milk, and vanilla and stir with a wooden spoon or rubber spatula just until combined. The mixture may look curdled.
Stir in the flour and mix just until blended. Stir in the nuts, if using.
Scrape the batter into the pan and spread evenly. Bake for 45 to 55 minutes or until a cake tester or toothpick inserted in the center comes out clean and the bread is risen, lightly browned, and pulls away from the sides of the pan.
Cool the bread in the pan set on a wire rack for about 10 minutes. Remove the bread and let it cool completely on the wire rack before serving.
To store, put the bread in an airtight container or plastic bag and store at cool room temperature for up to 3 days. To freeze, wrap in plastic and then foil. Freeze for up to 3 months. Defrost at room temperature.

REVIEWS:
This was one of the best tasting banana breads I have ever had. It wasn't as dense as most banana breads I have had but the taste was great anyway.
This is similar to a recipe I used as a little girl. I didn't have butter, so I used shortening (like in my old recipe). It was DE-lish!
I thought this banana bread tasted much better after it had cooled for a day.
This is very good. My Mom always made banana bread when I was at home. She added walnuts.
I am a banana nut bread freak and this was fantastic! This easily ranks with the best I've ever tasted. I made this recipe as muffins and baked for 16 minutes at the temperature recommended and then turned the oven on broil until they browned satisfactorily. Thank you so much for this recipe!
Fantastic made this for a bake sale for a co-worker that died unexpectantly. wanted something special for her kids. This was it. Every one loved it. Even us at home. Recommend to anyone. If I made it this good anyone can.. thanks again!
I liked this recipe very much, and have given copies to my friends! SO GOOD i WENT BACK ON LINE TO PRINT IT AGAIN WHEN I LOST THE FIRST PRINTING.
My family loves this bread. The smell and flavor make the mouths water. Great and everyone asks me for the recipe.
Wonderful and moist!
I love this recipe. I replace the sugar with Splenda and it is a healthy breakfast or snack!
I'm always looking for different things to prepare for breakfast for my husband, especially in hot weather. We get tired of breakfast food, and just want juice, coffee and something like this.
I really like this recipe because it's delicious and requires little time to prepare. I already have most of the ingredients so you can prepare it and bake it while you do other things. To make it even more special, you can put a glaze on it with a few finely sliced almonds...nice for coffee.
I have made this many times, and everyone loves it. My kids don't like nuts in it, so I make 2, one for the kids and one for the adults!
Very Delicious Recipe and Healthy.
This is the best recipe I found for banana bread. I used the bananas I had in the freezer and baked it in a 9x5 loaf pan.
The bread was very easy to make and quite delicious.
