Ingredients
- 2 cups diced cooked chicken
- 1/4 cup chopped red onion
- 1/2 green bell pepper, chopped
- 1 small tomato, chopped
- 1/2 avocado, sliced
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons cider vinegar
- 2 packets of stevia or 1/2 teaspoon agave
- 2 tablespoons salsa
- 1/2 teaspoon cumin
- 1 clove garlic, chopped
- 1 head romaine lettuce
- 1 cup shredded Monterey Jack cheese

Preparation
Step 1
•Place the chicken, onion, pepper, tomato, and avocado in a large bowl.
•Whisk together the olive oil, vinegar, stevia or agave, salsa, cumin, and garlic.
•Place lettuce on the serving plates, and pour the olive oil mixture over it.
•Place the chicken mixture on top.
•Top the chicken with the cheese. Serve.
