Ingredients
- 3 c chicken broth
- 1/3 c wild rice (soaked overnight)
- 1/2 c (or 4) green onions, thinly sliced
- 1 c half and half cream (or 3/4 c coconut milk and 1/4 cup 1% milk*)
- 2 T AP flour
- 1 tsp fresh thyme, or 1/4 tsp dried
- 1/8 tsp pepper
- 1/2 c sliced fresh mushrooms (or dried shitaki, soaked overnight*)
- 1 T sherry
- 1 T fish sauce*
- 1/2 tsp red pepper flakes*

Step 1
1. Combine broth and rice. Bring to a boil. Cook by simmering 40 minutes.
2. Stir in green onions, cook 5-10 minutes. Rice will be cooked.
3. Combine milks, flour, thyme and pepper.
4. Stir into rice mixture, along with mushrooms.
5. Cook until thick and bubbly.
6. Cook 1 minute more.
7. Stir in sherry, fish sauce and pepper flakes. Heat through.
