Ingredients
- 1 - 3 -4 lb. boneless roast (no fat), pork or beef
- 1 lb. dry pinto beans
- 1 10-oz. can Rotel tomatoes with green chilies
- 1 4-oz. can chopped green chilies
- 1 8-oz. can tomato sauce (maybe salsa?)
- 1 onion, quartered
- salt and pepper, to taste

Step 1
Place the roast in a large roasting pan (9x13 works fine). Put the beans around the roast, followed by the Rotel tomatoes, green chilies, tomato sauce, onion, salt and pepper.
Fill the pan with water to within an inch or two from the top of the roasting pan. Cover and bake at 250 degrees for 10-12 hours. You can cook at a higher temperature at the end to thicken the bean juice.
Easy to double this recipe, too!
Serve with warm, buttered flour tortillas
