Ingredients

  • 2-3 slices bacon
  • 1 lb shrimp (uncooked)
  • dash salt & pepper
  • 2 TBS all-purpose flour
  • 1 pkg sliced mushrooms
  • 2 Tsp canola oil
  • 1/2 bunch green onions (chopped)
  • 1 clove garlic chopped
  • 1 c. chicken broth (low-sodium)
  • 1/2 green pepper chopped

Preparation

Step 1

Cook bacon and until crisp and crumble. Reserve drippings. Saute mushrooms in skillet; add green onions, garlic, green pepper and saute until soft. Add flour and stir to create a roux. Add chicken broth and whisk until blended. Add shrimp and cook for approx 2 minutes. *Serve with grits (ground or instant). Top with crumbled bacon pieces and reserve chopped green onion.
