Ingredients

  • Best ever lemon pie
  • 1 1/4 c sugar
  • 1/3 c lemon juice
  • 6 .tbl cornstarch
  • 2 c water
  • 3 eggs separated
  • 1 1/2 tbl butter
  • 1 1/2 tsp lemon rind
  • 2 tsp vinegar
  • Never fail meringue
  • 1 tbl cornstarch. 6 tbl sugar
  • 2 tbl cold water. 1 tsp vanilla
  • 1/2 c boiling water. Pinch of salt
  • 3 egg whites

Preparation

Step 1

Lemon pie
Mix sugar cornstarch together in top of double boiler. Add2 c cold water and stir together. Combine egg yolk with lemon juice & beat. Add to rest of mixture. Cook until thickened over boiling water for about 25 minutes. This does away with the starchy taste. Now remove from heat and add butter, lemon rind, and vinegar and stir thoroughly. Pour into deep 9inch pie shell. (Already baked) and let cool. Cover with meringue and brown in oven.

Never fail meringue

Blend cornstarch and cold water in a saucepan. Add boiling water and cook, stirring until clear and thickened. Let stand till completely cooled. With electric beater at high speed, beat egg whites until foamy. Gradually add sugar and beat till stiff not dry. Turn mixer to low speed, add salt and vanilla. Gradually beat in cold mixture(cornstarch). Turn mixer to high and eat well. Spread over cooled filling and bake at350 for 10 minutes(or browned)
