Ingredients

  • 1 stick butter or margarine
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1/2 to 3/4 teaspoon cocounut or rum flavor
  • 1 1/2 cups (13.5 oz) mashed ripe bananas (about 3 large, 22 oz. before peeling)
  • 1/4 cup honey
  • 2 large eggs
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 cups whole wheat flour
  • 3/4 to 1 cup diced dried pineapple
  • 1/3 cup (generous) shredded coconut

Step 1

Preheat oven to 350. Line a 12 cup muffin pan with muffin liners and grease the cups.

In a large bowl, beat together the butter, sugar, vanilla, coconut or rum flavor. Add the bananas, honey, eggs, baking soda, baking powder, nutmeg and salt, beating until smooth. Stir in the flour, then the dried fruit. Spoon the batter into the muffin cups. Sprinkle each muffin with coconut.

Bake for 25 to 28 minutes. Remove from oven and as soon as possible, tilt each muffin in its cup to allow air to circulate to prevent the bottoms from steaming.
