Ingredients

  • French Dressing:
  • 6 cups shredded lettuce
  • 3 cups chopped cooked chicken
  • 3 ahrd boiled eggs, chopped
  • 2 medium tomatoes, seeded and chopped
  • 3/4 cup crumbled blue cheese
  • 6 slices bacon, crisp cooked, drained and crumbled
  • 1 medium avocado, halved, seeded, peeled and cut into wedges
  • 1 small stalk Belgian endive
  • 1 recipe Brown Derby French Dressing
  • 1/3 cup red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon pepper
  • 1/2 cup olive oil
  • 1 clove garlic

Preparation

Step 1

Place lettuce on six individual plates. Evenly divide chicken, eggs, tomatoes, cheese and bacon among plates, arranging each in a row atop lettuce. Place avocado wedges and endive leaves to the side. Serve with French dressing.

French Dressing:

In a screw top jar, add red wine vinegar, lemon juice, Worcestershire sauce, salt, sugar, dry mustard, pepper and garlic minced. Cover and shake to mix well. Add 1/2 cup olive oil, cover and shake vigorously. Shake before serving.
