Guacamole Perfected

How hard is it to make Guacamole? Answer: It isn't. The only problem is, I'm very particular about how it's made. I try to keep my guacamole dip pure and simple, which means I never, EVER add sour cream or onion. The key to good guacamole, besides ripe Haas avocados, is lime juice. This is my fool-proof way of making guacamole. I could eat a bowl of this every day and never tire of it.

Ingredients
- 1 ripe Haas avocado (just beginning to soften)
- 1 small lime
- 1 small clove fresh garlic, finely minced
- 1-2 Tbsp. salsa (I use mild)
- coarse salt
- 1 Tbsp. fresh cilantro, chopped (optional)

Step 1
Cut the avocado in half and remove the pit.
In a shallow bowl, mash the avocado with a fork (if tripling or quadrupling this recipe, you can use a potato masher). Never, EVER, use a blender, or you will end up with puree. We like to mash, leaving a few chunks-- my preference.
Squeeze about 2 tsp of lime juice (reserving the rest if you want more).
Add the fresh garlic and salsa combine. Add the fresh cilantro, if using.
Season with salt, to taste.
Enjoy with chips and and an ice cold beer or margarita.
