Ingredients

  • 1 large beet -- peeled and cut into 1 inch chunks
  • 1 large red onion -- peeled and cut into 1 inch chunks
  • 2 medium sweet potatoes -- cut into 1 inch cubes
  • 1 cup baby carrots
  • 2 large parsnips -- cut into 1" cubes
  • 1 acorn squash -- with skin, cut into 2" cubes
  • 1/2 cup orange juice
  • 3 Tablespoons duck sauce
  • 1 Tablespoon salt
  • 1/4 teaspoon dried rosemary -- crumbled

Step 1

Place the beet, onion, sweet potatoes, carrots, parsnips and squash into a 6 quart slow cooker. Add orange juice, duck sauce, and spices. Cook on high for 4 1/2 hours.
