Ingredients
- 4 cups corn, fresh or frozen
- 1/2 lb. bacon, diced
- 1 medium onion, peeled and diced
- 3 stalk celery, diced
- 1 red pepper, seeded and diced
- 2 large white potatoes, dice large
- 4 cups chicken stock
- 1 cup potato flakes instant mashed
- 2 bay leaves
- 1 sprig thyme
- 1/4 cup cilantro, chopped
- 1 jalapeno pepper, minced
- sea salt and freshly ground black pepper to taste

Step 1
1. Place the Inner Pot in the cooker. Place the bacon in the Inner Pot. Press BROWN. Cook for until crisp.
2. Add the vegetables except for corn and cook 10 minutes.
3. Add the rest of the ingredients except the potato flakes.
4. Place the Lid on the cooker, lock Lid and switch the Pressure Valve to Closed.
5. Press CANCEL to turn off BROWN mode. Press COOK. Increase the PRESSURE ADJUST to 50.
6. Once the timer reaches 0, the cooker will automatically switch to KEEP WARM. Switch the Pressure Valve to Rapid Release. When the steam is completely released, remove the Lid and press CANCEL.
7. Press BROWN. Stir in the potato flakes until mixed well. Press CANCEL. Season with salt and pepper. Serve.
