Ingredients

  • 7 medium beets -- cooked and shredded
  • 5 medium pears -- peeled and cut into chunks
  • 4 eggs
  • 3/4 cup potato starch
  • 1/3 cup oil
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder

Step 1

Preheat oven to 350. Place beets and pears in a large bowl. Add the beaten eggs to them and mix a bit. Sift potato starch over this mixture. Add the oil, sugar, salt, cinnamon and baking powder and mix the batter by hand until everything is fully incorporated. Pour into 9 or 10 inch round pan. Bake for 45-50 minutes until firm and set.
