Ingredients

  • 12 ozs vanilla wafers(24)
  • 2 8 oz cream cheese
  • 3/4 cup white sugar
  • 2 eggs
  • 1 T lemon juice or 1 t vanilla
  • 21 ozs cherry pie filling

Preparation

Step 1

Preheat oven to 350.
Line muffin tin with paper liners and spray with Pam.
Place 1 wafer in each liner.
Cream together with an electric mixer the cream cheese, sugar, eggs and lemon or vanilla. Fill each muffin liner 1/2 full with this mixture.
Bake at 350 for 15 minutes. Cool and then top with a teaspoonful of cherry (or any other flavor) pie filling.
These can be frozen, without the topping, for later use.
