Ingredients

  • 1-1/2 lbs chopped mushrooms
  • 1 chopped onion
  • 1/2 tsp chili flakes
  • 6 cloves chopped garlic
  • 1/2 cup grated beets or carrots
  • 3/4 cup bread crumbs
  • 3/4 cups Parmesan cheese
  • 1/3 cup chopped parsley
  • 3 tsp beef or veg bouillon base
  • 2 eggs
  • 3/4 cup quick oats

Preparation

Step 1

Put 2 tblsp olive oil in a large sauté pan. Add the onions and let them get soft, then add the mushrooms and garlic. Season with chili, salt and pepper. When browned and cooked through, add the carrots. Transfer to a large mixing bowl and add the bread, parm, eggs, oats and parsley. Add two more tblsp olive oil to sauté pan. Form patties and fry gently on each side.
