Halibut in Dill Sauce

Ingredients
- 3 tbsp. unsalted butter
- 1 shallot, peeled and minced
- 1/2 cup dry, white wine
- 1 1/4 cup heavy cream
- Four 8 oz. halibut steaks, cut 1"thick
- 2 tbsp. fresh dill, finely chopped
- sea salt & cayenne pepper to taste

Step 1
1. Place the Inner Pot in the cooker. Place the butter in the Inner Pot. Press BROWN. When the butter is melted, add the shallots and cook for 2 minutes.
2. Add wine and cook for 3 minutes. Add 1/4 cup heavy cream and dill. Place Wire Rack into the cooker. Place the fish on the rack. Place the Lid on the cooker, lock Lid and switch the Pressure Valve to Closed.
3. Press CANCEL to turn off BROWN mode. Set the PRESSURE ADJUST to 50. Set the COOK TIME to 4 minutes.
4. Once the timer reaches 0, the cooker will automatically switch to KEEP WARM. Switch the Pressure Valve to Rapid Release. When the steam is completely released, remove the Lid and press CANCEL.
5. Carefully, remove the Wire Rack with the fish and reserve. (Handle rack with caution. It will be very hot.)
6. Press BROWN. Add 1 cup of heavy cream and reduce until slightly thick. Press CANCEL. Season with salt and cayenne.
7. Spoon sauce over fish and serve.
