Ingredients

  • 1/2 cup bulgar
  • 1/2 cup kasha
  • 1 cup chicken broth
  • 8 grape tomatoes -- cut in half
  • 6 small scallion -- thinly sliced
  • 1/2 cup chopped fresh parsley
  • juice and zest from 1 small lemon
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon crushed red pepper
  • 1 can chickpeas

Preparation

Step 1

Place bulgar and kasha in a medium bowl.

In a small saucepan, heat broth to boiling. Pour the boiling broth into the bowl with the grains and cover. Set aside for 30 minutes.

Combine tomatoes, scallion, parsley, lemon, olive oil, salt, pepper and red pepper. Add chickpeas. Stir in the grains. Toss to combine. Serve at room temperature.
