Ingredients
- 1 1/4 cups water
- 1/3 cup pearl barley
- 1/2 teaspoon salt
- 1 can black beans -- rinsed and drained
- 1 small yellow pepper -- chopped
- 1 small tomato -- chopped
- 1 cup frozen corn -- thawed
- 1 scallion -- chopped
- 1 teaspoon dried oregano
- Juice of 1/2 lime
- Salt and pepper

Preparation
Step 1
Bring the water to a boil. Add barley and salt. Reduce heat and cover. Simmer for about 30 minutes, until barley is tender. Drain well.
Combine remaining ingredients and stir in barley. Season with salt and pepper.
