Ingredients
- 4 (4oz) orange roughy fillets
- vegetable cooking spray
- 3 Tbsp lemon juice
- 1 Tbsp dijon mustard
- 1 Tbsp reduced calorie margarine, melted
- 1/4 tsp coarsely ground pepper
- coarsely ground pepper (optional)
- lemon slices (optional)

Step 1
Place fillets on rack of a broiler pan coated with cooking spray. Combine lemon juice and next 3 ingredients; stir well. Brush half of lemon juice mixture over fillets. Broil fillets 5 1/2 inches from heat 8 to 10 minutes or until fish flakes easily when tested with a fork. Drizzle remaining lemon juice mixture over fillets; transfer to a serving platter. If desired, sprinkle with ground pepper, and garnish with lemon slices.
