Ingredients

  • 1 pound ground turkey
  • 1 packet taco seasoning mix
  • 3/4 cup water
  • 1/2 boxx frozen spinach -- defrosted
  • 1 package eggrolll wrappers

Preparation

Step 1

In a skillet, saute turkey, breaking it up into small pieces. Cook until just starting to brown. Add taco seasoning and water. Bring to a simmer.

Squeeze the liquid out of the spinach and cook for 5 minutes longer until all the water is cooked out. Completely cool or the eggrolls will be soggy.

Put 2 tablespoons of filling into the eggroll wrapper and wrap, using water to seal. Fry in oil.
