- 3 tablespoon(s) lime juice
- 1 chipotle chile in adobo sauce, minced
- 1 tablespoon(s) adobo sauce
- 1.25 teaspoon(s) honey
- 1.25 teaspoon(s) ground cumin
- 1/2 teaspoon(s) minced garlic
- 1/2 teaspoon(s) kosher salt
- 1/3 cup(s) extra-virgin olive oil
- 1 tablespoon(s) chopped cilantro

Preparation
Step 1
In a medium bowl, whisk together lime juice, the minced chipotle chile, adobo sauce, honey, ground cumin, minced garlic, and kosher salt.
Whisking continuously, slowly add extra-virgin olive oil until emulsified. Stir in chopped cilantro.
Yields: 2/3 cup (enough for a salad for 4)
