  • 3 sticks butter or margarine
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons peppermint extract or 1/8 to 1/4 teaspoon peppermint oil
  • 3 cups flour
  • 1/2 cup unsweetened natural cocoa powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips

Step 1

Preheat oven to 350. Line two baking sheets with parchment paper.

In a large bowl, cream together butter and sugars. Add the eggs one at a time, beating well after each addition. Mix in the vanilla and peppermint extracts.

Add the flour, cocoa, baking soda and salt, beating to combine. Stir in the chocolate chips.

Drop the dough by tablespoonfuls onto baking sheets. Bake the cookies for 12 to 15 minutes, until they're slightly darker around the edges. Remove from oven and transfer to a rack to cool.
