Ingredients
- 16 ounce package frozen edamame
- 16 ounce package frozen corn
- 1 red bell pepper -- diced
- 6 scallion -- chopped
- 1 packet Italian dressing mix (made with white vinegar and a drizzle of balsamic vinegar)
- 3 cloves garlic -- crushed

Preparation
Step 1
Cook the edamame and drain. Combine corn, edamame, red pepper and scallion in a large bowl. Season with salt and pepper. Follow directions to make salad dressing. Add crushed garlic to the dressing.
Pour the dressing over the salad and toss to coat. Refrigerate one hour.
