  • 1/2 cup(s) orange juice
  • 1/4 cup(s) lime juice
  • 2 tablespoon(s) lemon juice
  • 1 tablespoon(s) white balsamic vinegar
  • 1 red chile, minced
  • 1 large shallot, minced
  • Chopped mint
  • 1/2 teaspoon(s) grated orange zest
  • 1/2 teaspoon(s) grated lemon zest
  • 1 teaspoon(s) Dijon mustard
  • Kosher salt
  • Black pepper
  • 1/4 cup(s) extra-virgin olive oil

Preparation

Step 1

In a saucepan, simmer orange juice, lime juice, and lemon juice for 4 minutes or until 1/3 cup remains; pour into a bowl.

Whisk in white balsamic vinegar, a minced red chile, minced shallot, chopped mint, orange and lemon zests, Dijon mustard, kosher salt, and black pepper.

Whisking continuously, slowly add extra-virgin olive oil until emulsified.

Yields: 2/3 cup (enough for a salad for 4)
