Ingredients
- 1 jicama, cut in julienne strips
- 2 med red, yellow & green peppers, cut into julienne strips
- 1 recipe caraway dressing
- 8 C torn mixed greens
- 2 med. oranges,peeled & sliced crosswise
- 4-5 snipped chives

Preparation
Step 1
Caraway Dressing:
1/3 C olive oil
1/4 C white wine vinegar
2 T honey
1 T Dijon mustard
1 t caraway seeds, crushed
1/2 t finely shredded orange peel
1/8 t ground pepper
In large bowl, toss together jicama, pepper strips & 1/2 caraway seed dressing. Cover & chill for 4 hrs.
To serve place mixed greens in serving bowl. Drizzle with dressing. arrange orange slices around edges of bowl. Stir chopped chives into jicama mixture; spoon into cneter of salad.
Serve immediately.
