Ingredients

  • 2 apples, peeled, cored and diced
  • 6 slices whole-wheat bread, cubed
  • 1 1/2 cups milk
  • 1 cup sugar
  • 1 tsp. cinnamon
  • 3 eggs, large
  • 1 tsp. vanilla extract
  • 2 cups warm water

Step 1

1. In a medium size bowl, mix the eggs, sugar, cinnamon, milk, and vanilla extract. Soak the cubed bread in the egg mixture for 10 minutes. Mix remaining ingredients, except warm water, into the bowl.
2. Pour the pudding into a 1-quart ceramic or glass dish and cover with foil.
3. Place the Inner Pot in the cooker. Set the Wire Rack in the Inner Pot. Pour 2 cups of warm water into the pot of the cooker. Place the dish on the rack in the cooker.
4. Place the Lid on the cooker, lock Lid and switch the Pressure Valve to Closed. Press COOK.
5. Once the timer reaches 0, the cooker will automatically switch to KEEP WARM. Switch the Pressure Cooker to Rapid Release. When the steam is completely released, remove the Lid and press CANCEL.
6. Carefully remove Bread Pudding from cooker and remove foil.
