Ingredients

  • 1 egg, large
  • 1/2 cup sugar
  • 1 tbsp. butter
  • 1/2 cup milk
  • 1 tsp. baking powder
  • 1 lemon, zested
  • 1 /2 cups flour
  • 1/2 tsp. almond extract
  • 2 cups blueberries
  • 2 cups warm water

Step 1

1. In a medium size bowl mix the butter and sugar together. Mix one egg at a time with some flour until all are incorporated. Fold in the blueberries, almond extract and the rest of the ingredients, except warm water.
2. Spoon the pudding into 6 or 4-oz. ramekins and cover with foil.
3. Place the Inner Pot in the cooker. Set the Wire Rack in the Inner Pot. Pour 2 cups of warm water into the pot of the cooker. Place the ramekins on the rack in the cooker.
4. Place the Lid on the cooker, lock Lid and switch the Pressure Valve to Closed. Set the PRESSURE ADJUST to 40. Set the COOK TIME to 10 minutes.
5. Once the timer reaches 0, the cooker will automatically switch to KEEP WARM. Switch the Pressure Valve to Rapid Release. When the steam is completely released, remove the Lid and press CANCEL.
6. Carefully remove pudding from cooker, remove foil and serve.
