- 1 c. cookie crumbs
- 1/2 tsp. cinnamon
- 1 lemon, zested and juiced
- 3 fresh peaches, pits removed, sliced
- 1/4 c. butter, melted
- 1 c. warm water
- Optional: vanilla ice cream

Preparation
Step 1
1. Butter a 6-inch baking dish. Combine cookie crumbs, sugar, cinnamon, juice and rind
of lemon. Place alternate layers of peaches and crumbs mixture in baking dish. Start with peaches on the bottom layer and end with crumbs on the top layer. Pour melted butter over ingredients and cover bowl firmly with aluminum foil.
2. Place the Inner Pot in the cooker. Set the Wire Rack in the Inner Pot. Pour 1 cup of warm water into the pot of the cooker. Place the baking dish on the Wire Rack in the cooker.
3. Place the Lid on the cooker, lock Lid and switch the Pressure Valve to Closed. Press COOK.
4. Once the timer reaches 0, the cooker will automatically switch to KEEP WARM. Switch the Pressure Valve to Rapid Release. When the steam is completely released, remove the Lid and press CANCEL.
5. Carefully remove the Peach Crisp from the cooker and remove the foil. Carefully remove and serve.
Optional: Serve with vanilla ice cream
