Ingredients
- 1 large cauliflower, cut into flowerets
- ½ t. salt
- 3 c. water
- ¼ c. butter or margarine, melted
- 1 T. sugar
- ½ t. salt
- ½ t. pepper
- 1 c. round buttery cracker crumbs
- 1 ½ c. shredded Cheddar cheese, divided
- 1 medium onion, chopped
- ½ c. chopped green pepper
- 1 16-ounce can whole tomatoes, undrained and chopped

Preparation
Step 1
Combine first 3 ingredients in a large saucepan; bring to a boil. Cover, reduce heat, and cook 5 minutes or until tender; drain. Set aside.
Combine butter and next 4 ingredients in a large bowl; stir in cauliflower, 1 c. cheese, onion, chopped green pepper, and tomatoes. Spoon into three lightly greased 1 ½ -cup individual baking dishes.
Bake at 350 for 20-25 minutes. Sprinkle with remaining ½ c. cheese, and bake 5 additions minutes.
(You can bake casserole in a 13x9x2-inch baking dish at 350 for 35 minutes. Add remaining cheese and bake as directed)
