Ingredients
- Thin crust pizza dough for two pizzas
- All-purpose flour for dusting
- 1/4 cup olive oil for brushing
- 6 –7 garlic cloves, minced
- 16 ounces grated mozzarella cheese
- 2 pounds heirloom tomatoes, thinly sliced or 2 pints cherry tomatoes (Cherubs), halved
- Salt and freshly ground pepper, to taste
- 16 basil leaves, thinly sliced

Preparation
Step 1
Preheat pizza stone in 450°F oven for 20 minutes.
Using rolling pin stretch dough into a 10-inch round. Lightly dust pizza peel with flour and lay the dough on top. Combine minced garlic with olive oil and brush lightly over crust. Scatter cheese evenly over dough, leaving ½ inch border. Arrange tomatoes on top and season with salt and pepper. Carefully slide pizza onto the preheated stone and bake until crust is golden brown, 10 to 11 minutes.
Using pizza peel, transfer pizza to a cutting board and cut into slices. Scatter basil over pizza slices and serve immediately.
