Italian Tortellini Soup - from Cheryl

Ingredients

• 1 lb sausage casing removed and cut into pieces
• 1 cup pureed onion
• 2 cloves chopped garlic
• 6 c. beef stock
• 16 oz can diced tomatoes (drained)
• 8 oz. tomato sauce
• 1 lg zucchini sliced
• 1/2 c. red wine
• -dash basil/oregano
• 8 oz. cheese tortellini

Preparation

Step 1

Brown sausage and add above ingredients. Saute and add sauce and simmer. Add tortellini 15 min prior to serving. Will cook quickly in hot soup mixture.
