- 6 tablespoons dry bread crumbs
- 1/3 cup grated Parmesan cheese
- 1 1/2 pounds boneless skinless turkey breast tenderloins
- 2 tablespoons olive oil
- 1/4 cup dry white wine OR low sodium chicken broth
- 2 tablespoons lemon juice

Preparation
Step 1
In a large zipper-topped plastic bag, combine bread crumbs and cheese. Moisten turkey tenderloins with water; add to bag. Close bag and shake gently until turkey is evenly coated. Set aside. Heat the oil in a large skillet over medium heat; add turkey and cook for 10 to 15 minutes or until browned and cooked through; remove from skillet, reserving drippings in skillet. Place turkey on a serving platter; cover to keep warm. Add wine and lemon juice to skillet drippings; whisk up all of the browned bits from the bottom of the pan and cook over medium-high heat for 2 to 3 minutes or until sauce is golden brown, stirring frequently. Serve spooned over the turkey.
SERVING SUGGESTION: Steamed red skinned potatoes, steamed green beans and steamed baby carrots.
VEGETARIAN: Use non-breaded faux chicken patties.
KOSHER: Use Parmesan-flavored rice sprinkles.
