PINEAPPLE PECAN CAKE

Ingredients

  • CAKE:
  • 2 CUPS FLOUR
  • 1 1/2 CUPS SUGAR
  • 2 EGGS
  • 1 TSP VANILLA
  • 2 TSP BAKING SODA
  • 20 OZ CAN CRUSHED PINEAPPLE PACKED IN IT'S OWN JUICE(FRUIT AND JUICE)
  • 1 GENEROUS CUP CHOPPED PECANS OR WALNUTS
  • FROSTING:(INGRIEDIANTS SHOULD BE WARMED AT ROOM TEMP;MAKE WHILE CAKE IS BAKING)
  • 8 OZ CREAM CHEESE, SOFT
  • 1 STICK BUTTER, SOFT
  • 1 1/2 CUPS POWDERED SUGAR
  • 1/2 CUP CHOPPED PECANS OR WALNUTS ( OR OMIT ENTIRELY)

Step 1


PREHEAT OVEN TO 350. GREASE & FLOUR 9 X 13 INCH PAN . MIX TOGETHER IN A LARGE BOWL, CAKE INGREDIENTS. POUR INTO PREPARED PAN AND BAKE FOR ABOUT 30-35 MINUTES

MIX CREAM CHEESE AND BUTTER UNTIL SMOOTH, ADD SUGAR, THEN NUTS. SPREAD ON HOT CAKE RIGHT OUT OF THE OVEN. REFRIGERATE IMMEDIATELY!!!
