Ingredients
- Water/oil mixture
- 2 cups bite-size, low fat Cheddar cheese-flavored crackers
- 1/2 to 3/4 teaspoon dried basil
- 1/8 teaspoon black pepper
- 1 pound boneless skinless chicken breast halves, all visible fat removed
- 2 tablespoons skim milk

Preparation
Step 1
Preheat oven to 400 degrees. Spray a shallow baking pan with water/oil mixture. Place crackers, basil and pepper in a large zipper-topped plastic bag. Use a rolling pin to finely crush the crackers. Cut the chicken into 16 tenderloin strips, about 1 x 3” each; add a few at a time to the cracker mixture, seal the bag and shake to coat. Place coated chicken strips on prepared baking pan. Bake, uncovered, for 5 to 7 minutes or until chicken is tender and cooked through.
SERVING SUGGESTION: A big bowl of coleslaw (use a ready-made mix and toss with low fat mayo and a little rice vinegar). Add corn on the cob.
