Ingredients
- 1 1/2 pounds cooked boneless skinless turkey breast meat, cut into bite-size pieces
- 1 1/3 cups cooked brown rice
- 1/3 cup sliced celery
- 1/3 cup sliced almonds
- 1/3 cup non-fat mayonnaise
- 1/4 teaspoon lemon juice
- Black pepper, to taste
- 1/2 cup shredded low fat Cheddar cheese

DO-AHEAD TIP: Cook brown rice.
Preheat oven to 350 degrees. In an ungreased 9- x 9-inch baking pan, combine turkey, rice, celery, almonds, mayonnaise, lemon juice and pepper; bake, uncovered, for about 40 minutes. Top with cheese and bake for an additional 5 minutes.
LC SERVING SUGGESTION: Serve steamed kale on the side.
